Truffle salads for summer: 3 easy recipes

Niçoise salad with truffles

For 2 persons

Ingredients

Preparation

  1. Cook the green beans and fava beans in the English way, as well as the hard-boiled eggs.
  2. Cut up any vegetables that need to be cut up and set aside.
  3. Arrange all the elements on a plate, ending with the tuna and quartered eggs.
  4. Season generously with oil, balsamic and truffle salt and enjoy!

Caesar salad with truffles

For 2 persons

Ingredients

For the salad :

  • 150g of romaine lettuce
  • 200g of free-range chicken breast
  • 80g of parmesan shavings
  • 60g dried / marinated tomatoes
  • 50g chopped spring onions
  • 60g bread croutons, browned in a pan
  • Fresh summer truffle shavings (optional)

For the truffle Caesar sauce :

Preparation

  1. Roast the chicken breasts in the oven or in a frying pan with a little fat. Slice them into fine bevels and set aside.
  2. In a blender, blend together all the ingredients for the Caesar sauce and set aside in a cool place.
  3. In a bowl, toss the salad with a generous amount of Caesar dressing. The salad should be well coated with the dressing.
  4. In a soup plate, arrange all the elements of the salad nicely, starting with the romaine. Finish off with some beautiful shavings of summer truffle!

Artisan's salad

For 2 persons

Ingredients

Preparation

  1. Cook the grenailles with their skins in a large pan of cold salted water and then cool them. Cut them in 2.
  2. Cut the carrot and radish into julienne strips, and cut the endive leaves in half.
  3. Roast the walnut kernels in a pan.
  4. Make the vinaigrette with the oil, vinegar and truffle salt.
  5. In a bowl, mix all the ingredients - except the ham and Moliterno - with the dressing.
  6. In a soup plate, arrange all the elements. Finish with the ham in chiffonade, shavings of Moliterno and fresh truffle!
