Truffle salads for summer: 3 easy recipes
The advantage of the truffle? It can be eaten all year round! Summer brings its share of truffle flavours with the peak season of the Summer Truffle, or St John's Truffle. This truffle with its subtle aromas will be the ally of your mixed salads... for fresh, sunny and very tasty meals!
So how do you make a truffle salad? Follow this guide with Artisan de la Truffe !
Niçoise salad with truffles
For 2 persons
Ingredients
- 2 large tomatoes or 2 handfuls of cherry tomatoes
- Mesclun
- 150g of tuna belly
- 6 anchovy fillets
- 2 organic eggs
- 60g of beans
- 100g of green beans
- 30g of chopped spring onions
- Shaved Radish
- Black olives
- Olive oil and balsamic vinegar black truffle flavour Artisan de la Truffe
- IGP Guérande salt with summer truffle Artisan de la Truffe & pepper
- Fresh summer truffle shavings (optional)
Preparation
- Cook the green beans and fava beans in the English way, as well as the hard-boiled eggs.
- Cut up any vegetables that need to be cut up and set aside.
- Arrange all the elements on a plate, ending with the tuna and quartered eggs.
- Season generously with oil, balsamic and truffle salt and enjoy!
Caesar salad with truffles
For 2 persons
Ingredients
For the salad :
- 150g of romaine lettuce
- 200g of free-range chicken breast
- 80g of parmesan shavings
- 60g dried / marinated tomatoes
- 50g chopped spring onions
- 60g bread croutons, browned in a pan
- Fresh summer truffle shavings (optional)
For the truffle Caesar sauce :
- 100g of homemade mayonnaise
- 1 clove of garlic, degermed
- 1/2 lemon juice
- 50g mushroom and summer truffle sauce Artisan de la Truffe
- 50g of Moliterno with truffle (or parmesan if you don't have it)
- 50g of premium anchovies
- 1 tablespoon Worcestershire sauce
Preparation
- Roast the chicken breasts in the oven or in a frying pan with a little fat. Slice them into fine bevels and set aside.
- In a blender, blend together all the ingredients for the Caesar sauce and set aside in a cool place.
- In a bowl, toss the salad with a generous amount of Caesar dressing. The salad should be well coated with the dressing.
- In a soup plate, arrange all the elements of the salad nicely, starting with the romaine. Finish off with some beautiful shavings of summer truffle!
Artisan's salad
For 2 persons
Ingredients
- 250g of small potatoes
- 100g mesclun
- 100g white ham with truffle
- 30g walnut kernels
- 50g of Moliterno with truffle
- 1 red endive
- 1/4 red onion
- 1 carrot
- 50g daikon radish
- Olive oil and balsamic vinegar black truffle flavour Artisan de la Truffe
- IGP Guérande salt with summer truffle Artisan de la Truffe & pepper
- Fresh summer truffle shavings (optional)
Preparation
- Cook the grenailles with their skins in a large pan of cold salted water and then cool them. Cut them in 2.
- Cut the carrot and radish into julienne strips, and cut the endive leaves in half.
- Roast the walnut kernels in a pan.
- Make the vinaigrette with the oil, vinegar and truffle salt.
- In a bowl, mix all the ingredients - except the ham and Moliterno - with the dressing.
- In a soup plate, arrange all the elements. Finish with the ham in chiffonade, shavings of Moliterno and fresh truffle!
