What are canned truffles?
Artisan de la Truffe canned truffles are exceptional products, made from carefully selected fresh truffles, then preserved in an airtight jar to preserve their flavor and aroma.
Production process
The appertization technique is used to preserve truffles over the long term. Once cleaned and placed in jars, the truffles are placed in autoclaves for high-temperature sterilization, enabling them to be preserved for several years. Our canned truffles are produced to strict quality and food safety standards, guaranteeing optimum preservation and a long shelf-life.

Truffle, whole or in pieces
Harvested when perfectly ripe and evenly shaped, whole truffles are ideal in slices for the presentation of a refined dish. While truffle pieces come from truffles that have been extra broken during harvesting, sorting and cleaning, these precious fragments allow a very good transfer of aromas thanks to their size.
Use and gastronomic tips
Canned truffles offer different flavors from fresh truffles, and should not be cooked in the same way. Canned truffles are versatile and can be used in many ways to enrich your favorite dishes. In delicate slices to sublimate your dishes, in pieces to mark your sauces, in juice to deglaze a meat, or infused in a sauce to sublimate it. In contrast to fresh truffles, which are eaten as simple slices, the delicious flavors of truffles are revealed after cooking.
Whether whole, in pieces, broken, in carpaccio or in juice, we recommend pairing it with a dish that is being cooked, taking care to ensure that the cooking is neither too long nor too hot to reveal all the flavors of the canned truffle. Indeed, heat tends to annihilate the truffle's fragrance, so it's best to add it at the end of cooking, and not at over 80 degrees. Use canned truffles to prepare delicious risotto, roast poultry, red meat, foie gras, egg scrambles, mashed potatoes, homemade terrines or stuffed mushrooms for a touch of elegance. The taste of summer truffles will be less powerful than that of black truffles, more subtle for your recipes.
Preserving canned truffles
All our canned truffles have a best-before date of up to 3 years. To keep them at their best, store them in a cool, dry place away from direct sunlight. After opening, keep verrines in a cool place between 0°C and 4°C, and consume within 3 days to preserve their freshness and aroma.
