Ingredients (for about 15 pancakes)

  • 250 g flour (T45 for light pancakes)
  • 3 eggs
  • 500 ml whole milk (for a softer texture)
  • 2 tablespoons sugar (optional, for sweet crepes)
  • 1 pinch of salt
  • 2 tablespoons melted butter (+ a little for the pan)
  • 1 tablespoon amber rum or vanilla extract (to taste)

Steps

  1. Prepare the dough:
    • In a large bowl, sift the flour to avoid lumps.
    • Add a pinch of salt and the sugar (if using).
    • Make a well in the center and break the eggs into it.
    • Mix gently, gradually incorporating the flour.
  2. Add the milk:
    • Drizzle in the milk while mixing with a whisk or spatula. This ensures a smooth batter.
  3. Add the flavourings:
    • Add the melted butter and rum (or vanilla extract) to flavor your pancakes.
