- 250 g flour (T45 for light pancakes)
- 3 eggs
- 500 ml whole milk (for a softer texture)
- 2 tablespoons sugar (optional, for sweet crepes)
- 1 pinch of salt
- 2 tablespoons melted butter (+ a little for the pan)
- 1 tablespoon amber rum or vanilla extract (to taste)

Prepare the dough:
- In a large bowl, sift the flour to avoid lumps.
- Add a pinch of salt and the sugar (if using).
- Make a well in the center and break the eggs into it.
- Mix gently, gradually incorporating the flour.
