Like the Iberian Ham, the "Paleta" is one of the great must-haves of the Iberian gastronomy.

The Paleta, or front leg of the pig, is a part that is more fatty and tender than the ham but just as tasty. Made from the Iberian pig Cebo de Campo, it will delight the connoisseurs. The Paleta Cebo de Campo comes from Iberian pigs that have been raised in semi-freedom. The diet of the Cebo de Campo Iberian pig is made up of fodder, natural pastures and, in part, acorns, which it consumes in the wild in the Dehesa, the oak plains, thus giving it the characteristic notes of Iberian sausages.
