Blini house style Astara

Blinis are traditional thick pancakes of Russian origin. Soft and comforting, they are ideal to accompany caviar or salmon. Homemade, in the style ofAstara, they are even better!

Blini house style Astara

For 1 dozen large blinis
Preparation time: 30 minutes
Cooking time : 10mn
Resting time : 1h30

Ingredients:

  • 4 eggs
  • 50g melted butter
  • 400ml warm milk
  • 250g of flour
  • 4g baking powder
  • 1 pinch of salt

Preparation:

  • In a large bowl, pour 30ml of warm water. Add the yeast and let stand for 5 minutes. Pour in half of the warm milk and mix.
  • Add flour and whisk until smooth.
  • Film the salad bowl and let it rest for about 1 hour at room temperature.
  • Add the remaining milk to the batter.
  • Separate the whites from the yolks, whisk the whites together and set aside.
  • Mix 3 egg yolks into the dough, add salt and melted butter until smooth.
  • Gently fold in the egg whites. Film and let rest again for 30 minutes.
  • In a nonstick skillet, cook the blinis to the desired size.
  • Serve warm with fresh cream and smoked salmon, tarama or a few grains of caviar Astara !
